In the state of Chiapa, you will find Mexico’s largest and oldest coffee producing regions. With the influence of the Atlantic Ocean on one side and the Pacific Ocean on the other side, the mountain slopes of the Sierra Madres Chiapa cross the region dividing the state and creating various special microclimates.

This lot is made up of Catuai and Typica varieties which have been decaffeinated using the Mountain Water process. Natural mountain water is sourced from Pico De Orizaba, one of the largest mountains in Mexico. The natural process of decaffeination leaves a full flavoured coffee without any chemical residue.

Best roasted on its own as a filter or espresso.
